The creation of Zlatna Nota begins in the vineyard, where harvesting is carried out by hand at the moment of optimal technological ripeness, in order to preserve the freshness and primary aromas of the grapes. From that moment, every stage is dedicated to preserving the natural potential of the grapes through carefully controlled technological processes. Processing begins immediately upon receipt of the grapes, under conditions that preserve the aromatic spectrum and establish the foundation for the next steps, focused on varietal precision, purity of expression and harmonious wine structure.
Fermentation and Ageing
Fermentation takes place in stainless steel tanks at a controlled temperature of 16–17°C, allowing the freshness, purity and aromatic definition of the varieties to be preserved. In this way, the finest expressions of Sauvignon Blanc and Pinot Blanc are retained, without losing their natural complexity.
After fermentation, the wine ages for six months in French oak barrique barrels, where it develops layers and structure.
