Crnogorski Chardonnay BarriqueThe grapes from carefully selected grapevines of Chardonnay clones, from the best localities of the Cemovsko polje, selected harvest, strictly limited yield. Aged one year in the best barriques from the most famous French forests, in the perfect conditions of our wine cellar “Šipčanik”.

Montenegrin Chardonnay Barrique 2012

It is light straw yellow colour, typical varietal aromas of green apple, pear and pineapple, with tones of vanilla, marzipan and almonds originated from the wood. On taste it is round, full and smooth, with the expressed depth and very elegant, refreshing finish with the fine grapefruit notes.

Glass: a slender, tulip-shaped glass

MATCHING WITH FOOD

Appetizers of fish, seafood, risotto, spicy soups, pastas and white meats with sauces, oily fish, chicken, turkey, veal and dishes with mushrooms.

HARVEST

Regularly good harvest concerning quality and yield of the grapes.Weather conditions for ripening grapes were favorable. The grapes were in good health.

ORIGIN

Viticultural areas: Valley of Lake Skadar , Podgorica’s viticultural area

Location:  Ćemovsko polje, microlocalities: Nikolj Crkva, Miljes, Dinos

Size of the vineyard: 218 ha

Exposition: north-south and southeast-northwest

Soil: skeletal and shallow,with over 2.500 hours annually

Planting density:   2.60×0.70 i 2.60×0.80

Growing type:  single and double Guyot

Average age of the grapevines:  from 5 to 30 years

TECHNICAL INFORMATION

Varietals: Chardonnay

Yield: 1.5 kg per vine (5-6 t/ha)

Harvest time: second half of August

Manner of harvest: manual, selected harvest

Vinification : fermentation in the barrels (barrique) vats

Temperature of fermentation: up to 18 oC

Duration of fermentation: 10-20 days

Malolactic fermentation:  controlled, using specially selected breeds of the malolactic bacteria

Aging:  in barrels, batonnage methods of aging the wine on the fine lees, becoming enriched with mannoproteins and polysaccharides, contributing to the fullness of taste.

The duration of aging: 10 months in the wooden barrels and then 6 months in inox vats

Chemical analysis: pH -3.12; total acids- 6.7 g/l; alcohol-13.84 % vol.
